TURKEY AND CHAMPIGNON MUSHROOM ROLLS

 

Ingredients ( for 4 people )

  • 400 g of sliced turkey breast
  • 200 gr of sliced champignon mushrooms
  • 100 g sliced scamorza cheese
  • 100 g sliced ham
  • extra virgin olive oil.
  • Salt and Pepper to taste.
  • 1 garlic clove
  • some sage leaves
  • chopped parsley

 

Preparation:

Beat the turkey slices with a meat pounder to make them thinner.
Prepare the rolls by placing half a slice of ham on each slice of turkey, a slice of scamorza cheese, a few slices of champignon mushrooms and finally a sage leaf. Roll the meat, starting from one end to the other. Close the roll with a couple of toothpicks. In a non-stick pan, place a garlic clove in a bit of extra-virgin olive oil,  remove when golden. Add the rolls and leftover sliced mushrooms. Cover the pan and cook until the rolls are golden. Turn them over occasionally so as they cook on all sides, and add sage leaves and parsley halfway through cooking.
